All we wanted to do was open a place that wasn’t overbearing in its attitude or condescending for not knowing the regional significance of this or that particular wine. A place that was fun and had tremendous warmth, great food and fine drink. No dress code, no lines, no cover. Straight up great service. So we came up with Vintage Wine Bar and Restaurant located in Chicago.
