Chef Maiden's cooking is based on extensive training in classic French techniques, his love of Southern food of the Appalachian region near his birthplace in Virginia, and his commitment to using local and seasonal ingredients. His background enables him to combine his love of grits (and most things fried), his passion for cooking with fine local ingredients, and his commitment to classically inspired dishes. Hungry mother will showcase Barry's artisan approach to cooking, with a changing menu of items prepared in house: cured meats, smoked fish, juicy pork sausage, and tender confit duck legs. A big fan of canning and preserving, Barry will give diners the opportunity to enjoy a peach or a tomato at the peak of their ripeness while they watch the snowflakes fall on cold New England winter nights.
